Jan Ellis was a well-known Springbok rugby player in the 1960s and 70s, and legend has it that this was his favourite pudding, so it bears his name. The pudding itself is a cake baked to a nice almost crispy crust with a generous helping of creamy, caramelly syrup over it. Comfort food at its very best and the pudding just soaks up the syrup like a sponge. This dessert is a close cousin to the traditional Malva pudding.
Real butter and rich cream makes for a delicious and comforting pudding.
